Chickpea Burger Recipe

Easy and healthy homemade burgers. Chickpeas are high in protein and make an excellent replacement for meat in many vegetarian and vegan dishes.
 

Ingredients

  • 1 chopped onion
  • 4 cloves of garlic crushed
  • 2 cans (400g Each) of chickpeas, drained and rinsed
  • Juice of 2 lemons
  • 300 grams washed, chopped spinach
  • 8 chopped sun-dried tomatoes
  • 125 ml oats
  • 50 ml coconut flour
  • 5 ml olive oil
  • Salt and pepper

Instructions

  • Fry the onions in a little olive oil, until soft. Add all ingredients except the coconut flour to a food processor and pulse until finely chopped.
  • Add the coconut flower bit by bit until the mixture is substantial but not dry.
  • Shape the mixture into about 6 patties and place on a baking sheet in the fridge for 30 min to cool.
  • Sprinkle the patties with olive oil and grill or air fry until golden brown and cooked through.
  • To finish, add a large mushroom as the base or half a brown roll.  Top with lettuce, tomato, caramelised onions and a healthy sauce of your choice (I am loving the Nando’s Lite Perinaise for a little Zing and only 27 cal per 15g serving)
